T. BERT’S CREOLE GUMBO

I found this as a handwritten recipe of my fathers, in an old family cook book my mother had, The Key West Cook Book. It also has hand written recipes from the residents of Key West, circa 1950! Tom Nelson. 2006.

Ingredients

8oz VEAL ground
8oz PORK ground
1 LG YELLOW ONION DICED finely
1 LG GREEN or RED PEPPER DICED finely
3 CELERY STICKS DICED finely
3 TBS LARD or BACON FAT or Canola Oil
2 ESCHELOTS and 6 cloves GARLIC minced finely
1tbs THYME fresh
1/2 cup PARSLEY fresh chopped loose pack
Cut up chop finely and fry brown
15OZ Can TOMATOE PUREE
2 QT WATER OR CHICKEN STOCK
1 PACKAGE FROZEN OCKRA

Recipe

Simmer 30 minutes
ADD SHRIMP & SAUSAGE & OR CHICKEN & OR SEAFOOD

Finish turn off heat and add:
1TBS GUMBO FILE’, optional

Serve right over white rice done nice.
