PENNE PASTA SALAD WITH CHERRY TOMATO AND SHRIMP
1 lb. Penne Pasta
1 lb. boiled and chilled Shrimp
½ cup of pitted Calamata Olives
2 cups of Cherry Tomatoes
¼ cup of fresh chopped Broad Leaf Parsley
2 Tbs. of fresh chopped Cilantro
Salt (to taste)
Black Pepper (to taste)
1/2 cup of Extra Virgin Olive Oil
¼ cup of Balsamic Vinegar
1 tsp. Sugar
In a bowl, add ½ cup of extra virgin olive oil, ¼ cup of balsamic vinegar and 1 teaspoon of sugar. Mix vigorously and set aside. Boil penne pasta until cooked to your liking. Boil 1 lb. of cleaned and deveined shrimp and then chill.
Add chopped parsley, calamata olives, cherry tomatoes and cilantro into a bowl and mix. Add the penne pasta and shrimp and mix. Pour the oil and vinegar mixture into the bowl.
Add salt and pepper. Mix all of the ingredients to your taste. Do not be afraid to add more oil, vinegar, salt or pepper. Serves 6-8 people.
