HOME MADE VENISON SAUSAGE
5 lbs. cut venison
4 lbs. of cut pork butt
Crushed Red Pepper
Joe’s Wild Side all Purpose Seasoning
With a meat grinder, take the venison and pork and run through the grinder mixing both types of meat equally. Once ground, mix all of the meat thoroughly so that the venison and the pork are blended. Spread the meat onto a large board or table to about ½ to ¾ of an inch in thickness. Place finger tips throughout the meat to make indentions that will hold the spices. Sprinkle salt, black pepper, crushed red pepper and Joe’s All Purpose Wild Side Seasoning over the meat. Add a cup or so of water spread evenly to allow the meat to be mixed easily. Mix the meat with your hands to blend the spices into the meat for several minutes. Spread the meat out again and repeat the seasoning process from the previous step. However, on the second seasoning, be careful not to over season or make the mixture too spicy. Add water again and mix thoroughly. When finished, make a few patties and fry in a skillet until cooked through. Taste and if needed, add more of whatever seasoning that you think it needs. If satisfied, you can freeze in patties or case the meat in sausage links.
